Anticipation


These guys are hanging out on the vine in my garden right now.  Oh the anticipation of fresh, home-grown tomatoes!  If we could just have a few hot, sunny days, these orbs of deliciousness would be ready for feasting upon.

But my question is, how to eat these?

There's the simple slice-and-sprinkle with sea salt, or get a little fancier with the Caprese thing layering slices of tomato with fresh mozzarella and basil, but I'm craving a little more inspiration this year.

So talk to me, folks...what are your favorite recipes that let luscious tomatoes shine forth in all their glory?

I just made some fried green tomatoes the other day... they were crisp, juicy, and oh so flavorful with a sprinkling of cayenne pepper and rosemary in the batter. I've also been toying with a tomato, basil, and watermelon salad with a citrus- fig scented balsamic vinaigrette. Did you have sigona's when you were up here, or is that a new development? If so, I will have to send you some of their flavored balsamic vinegars- they are outstanding!

Some of the things on my list are tomato and bread salad, a batch of homemade salsa for canning, pizzas of various types, and mock mincemeat made from the last of the green tomatoes (the ones trying to eek it out just before the first frosts) ...

Hey Erica! All of your recipes look so fresh and healthy. I am pretty (okay, VERY) challenged in the kitchen, but when it comes to tomatoes, I do make a good rotini pasta salad with chopped tomatoes, crumbles of feta, green pepper, sliced black olives and Newman's Own Family-Recipe Italian dressing! Pop it in the fridge overnight...it's better the next day!

Bruschetta, which I'll be posting to my blog as soon as MY tomatoes come in - they are all still green here. :-( Also, Tomatoes with Basil, Red Wine Vinegar, Salt & Pepper is delicious. I do have that recipe already on my blog if you want to check it out. I am very anxious for my tomatoes to look like yours!!!
